Paneer and Vegetable Wraps

Tonight, we (I) wanted something easily whipped together and eaten in front of the TV (we're watching Aladdin in honour of Robin Williams - and are far too into it than two adults should be...)

These wraps are really easy to make and if you like Indian flavours, you'll love them. You can make them as spicy or as mild as you like.

I've used paneer in mine to make them vegetarian - but you could easily substitute for whatever type of meat you like.

Give them a go! They'll take 10 minutes. This is enough to make 8 small wraps - 2 each was plenty for us for tea, so we'll have the leftovers for lunch tomorrow.



Paneer and Vegetable Wraps
175g paneer
2 tbsps vegetable oil
1/2 tsp ground cumin
1 tsp ground coriander
1 tsp gound tumeric
1/2 tsp ground ginger
1 tsp dried chilli flakes
 2 peppers (I used one red and 1 yellow)
125g spring onions
Large handful fresh coriander
8 tortilla wraps
1/2 cucumber
150ml yoghurt

1. Chop the paneer into 1cm chunks. Put a frying pan on a medium heat and heat the vegetable oil, then add the paneer. Fry, stirring often, until browned.
2. Stir in the cumin, ground coriander, tumeric, ginger and chilli flakes.
3. Finely chop the peppers and spring onions and add to the pan, along with 100ml water. Simmer for 5-7 minutes, until the veg has started to soften. Chop the coriander and add to the pan, then season with salt and pepper.
4. Chop the cucumber into matchstick shapes.
5. Let everyone serve themselves - add a spoonful of the paneer to a wrap, then top with a little yoghurt and some cucumber. Roll and enjoy!
